Lentil dahl
The lentils and spinach dissolve into a delicious spiced sauce in less time than it would take a delivery driver to reach your door. Great for a lazy or busy night!

- 1 onion
- 2 cloves garlic
- 100 g red lentils
- 1 tsp curry powder
- ½ tbsp garam masala
- 200 ml coconut milk
- 150 g spinach
- 1 flatbread/naan to serve
Chop the onions and garlic. Add 2 tbsp of oil to a pan and sauté for two minutes on high heat.
Add the lentils, curry powder and garam masala.
Add the coconut milk, and an equal amount of warm water. Bring up to a boil, and then turn down the heat to simmer for 20-25 minutes, until the lentils are ready.
Stir the spinach through the lentil dahl, and let it wilt. Season with salt & pepper to taste.
Serve with some flatbread, or rice.
