I never liked overnight oats, I can’t eat something sooo dry and stodgy on an empty stomach. Then I tried these.

Inspired by the flavours of a strawberry cheesecake, it’s like having a dessert for breakfast! (And they’re quick to make too!)

Ingredients
  

Bottom strawberry layer

  • 50 g frozen strawberries (1/3 cup)

Oat layer

  • 2 tbsp nut butter
  • 1 tbsp flax seeds ground
  • 1 tbsp maple syrup
  • 2 tbsp lemon juice (half a lemon)
  • ½ tsp vanilla extract
  • ½ cup any plant-based milk (120 ml)
  • ½ cup oats (40 g)

Topping layer

  • cup coconut yoghurt
  • fresh sliced strawberries
  • granola

Instructions
 

  • For the first layer, add the frozen strawberries to a small bowl and thaw them in the microwave. Mash them up with a fork and set aside to cool.
  • For the second layer, combine everything but the oats in a blender and mix. I only have whole flaxseeds (they need to be ground, so they'll act like a binder), and I find the nut butter I have to be difficult to dissolve, so I just do this as a shortcut, but you can mix it up in a bowl just the same.
  • Add the first layer to the bottom of a jar. Add the oat mixture on top (don't be too precise, it's pretty when the layers mix a bit), I like to add a layer of sliced strawberries about half way and cover with the rest.
  • Seal up and put in the fridge overnight, top off with some yoghurt and any other toppings you like.
