Strawberry cheesecake overnight oats
I never liked overnight oats, I can’t eat something sooo dry and stodgy on an empty stomach. Then I tried these.
Inspired by the flavours of a strawberry cheesecake, it’s like having a dessert for breakfast! (And they’re quick to make too!)

It's like having a dessert for breakfast!
Ingredients
Bottom strawberry layer
- 50 g frozen strawberries (1/3 cup)
Oat layer
- 2 tbsp nut butter
- 1 tbsp flax seeds ground
- 1 tbsp maple syrup
- 2 tbsp lemon juice (half a lemon)
- ½ tsp vanilla extract
- ½ cup any plant-based milk (120 ml)
- ½ cup oats (40 g)
Topping layer
- ⅓ cup coconut yoghurt
- fresh sliced strawberries
- granola
Instructions
- For the first layer, add the frozen strawberries to a small bowl and thaw them in the microwave. Mash them up with a fork and set aside to cool.
- For the second layer, combine everything but the oats in a blender and mix. I only have whole flaxseeds (they need to be ground, so they'll act like a binder), and I find the nut butter I have to be difficult to dissolve, so I just do this as a shortcut, but you can mix it up in a bowl just the same.
- Add the first layer to the bottom of a jar. Add the oat mixture on top (don't be too precise, it's pretty when the layers mix a bit), I like to add a layer of sliced strawberries about half way and cover with the rest.
- Seal up and put in the fridge overnight, top off with some yoghurt and any other toppings you like.
