Lentil dahl with spinach
Try this on a busy week night – it tastes like you spent ages, but it’s actually ready in half an hour!

Lentil dahl
The lentils and spinach dissolve into a delicious spiced sauce in less time than it would take a delivery driver to reach your door. Great for a lazy or busy night!
Ingredients
- 1 onion
- 2 cloves garlic
- 100 g red lentils
- 1 tsp curry powder
- ½ tbsp garam masala
- 200 ml coconut milk
- 150 g spinach
- 1 flatbread/naan to serve
Instructions
- Chop the onions and garlic. Add 2 tbsp of oil to a pan and sauté for two minutes on high heat.
- Add the lentils, curry powder and garam masala.
- Add the coconut milk, and an equal amount of warm water. Bring up to a boil, and then turn down the heat to simmer for 20-25 minutes, until the lentils are ready.
- Stir the spinach through the lentil dahl, and let it wilt. Season with salt & pepper to taste.
- Serve with some flatbread, or rice.
